Japan’s Food Industry Grows Hot with High-Tech Freezing

TOKYO — A small shop located near Kajiwara Station along Tokyo’s only streetcar line sells about 20 different kinds of bread, including milk bread, bean-jam buns, curry buns and baguettes.

But no pleasant aroma of freshly baked loaves emanates from the shop. All of its products are frozen, supplied by local bakeries from across Japan. As the shop’s website explains: “We have selected the best bread from 10,000 bakeries nationwide.”

The store is operated by Pan for You, a frozen bread startup based in Gunma Prefecture. “Pan” is Japanese for bread, a derivative of the French “pain.” Read more…..
